Zucchini lasagna !

So i’m in this “eating healthy” phase but still wanting to have tasty food and not to feel depressed by what’s in my plate. And honestly your answer for that is Pinterest. I’m spending hours on it just looking at…well not only recipes, everything, for inspiration for life. It’s awesome.

So last great find, was this “no pasta lasagna” recipe from Dashing Dish. So simple, so much healthier than the super heavy/cheesy regular lasagna and soooo good. Seriously (might not look that way but it really was)

So i used:

  • 4 zucchinis
  • 400 g of ground chicken
  • 1 small onion
  • 300g of brocoli
  • 200g of spinash
  • 400g of crushed tomatoes
  • 1 meat stock
  • 1 tea spoon of garlic (or more, love it)
  • Salt qnd pepper to taste
  • 400g of cottage cheese
  • 50g of Parmesan

Cut the zucchinis lengthwise in relatively thin stripes and cook 5min on each side at 200c.
Cook the meat and add the vegetables, salt, pepper, garlic and onion. I first cooked for a few minute the tomatoe sauce with the meat stock and then added to the meat mix. Simmer for about 10 min.
Mix the cottage cheese and the parmesan.

In a form place one layer of meat, one layer of zucchini and one of cheese mix. Repeat the layers until you’re doneūüôā

Put in the oven for about 1h at 190c.

It was the dish i made for our “let’s speak spanish” evening with the girls last Saturday. Everybody had brought their best game on with saulmon cupcakes, enchilada, chocolate mousse and my banana, strawberry and raspberry bread for dessert !
