Apricot cupcakes

On Tuesday evening last week i was feeling really stressed, going back to work after a week of vacations, having so much to do at work and being alone at home…just felt like baking something. But of course, i was too lazy to go down to the store so i had to find a recipe that would not ask for ingredients i didn’t already have in my cupboards. Challenge accepted.

My friend Marion made me a very cute “cupcakes recipes book” for my birthday. In it i found a “raspberry cupcake recipe” that seemed really simple. Since i didn’t have any raspberry jam (weird i know) i decided to make them apricot ! I also cut the recipe in half (was made for 12 cupakes) cause i wanted to make mini cucpakes.

2 eggs
100g butter
90 g sugar
100g flour
15g baking powder
apricot jam

For the icing:

50g butter
75g icing sugar
1 big spoon of milk
food colouring

Mix sugar and eggs, add the soften butter, flour and baking powder. Mix well. Heat the oven 180c. Fill in the cupcakes cup 3/4 and add some jam and then some more cupcake mix. Put in the oven for about 20 min.

Let the cupcakes cool down.

Mix butter, icing sugar, milk and colouring ( i mixed yellow and red to get a orange-ish color) and mix well. Spread on top of the cupcakes.

Even but cutting the amount of ingredients in half i had lots of left over so i also made a small cake and a big cupcake🙂 Perfect to put the candle on !

Mardi soir la semaine dernière, j’étais bien stressée par le boulot alors j’ai décidé de faire des cupcakes. Evidemment la feignasse en moi n’avait pas le courage de descendre au supermarché il fallait donc que je trouve une recette dont les ingredients se trouvaient déjà dans mes placards. j’ai trouvé une recette parfaite dans le petit livre de cuisine que m’a fait Marion pour mon annivesaire. A la base la recette est aux framboises mais je n’avais que de la confiture d’abricot. j’ai diminué les doses par 2 car je voulais faire des mini cupcakes.

2 oeufs
100g beurre
90 g sucre
100g farine
15g levure
confiture d’abricot

Pour le glaçage:

50g beurre
75g sucre glace
1 grande cuillère de lait
colorant

Mélanger les oeufs, le sucre, le beurre ramolli, la farine et la levure.

Remplir les caisettes a cupcakes aux 3/4, mettre une petite cuillère de confiture et rajouter de la pâte. Mettre au four a 180c pour 20 min.

Laissez refroidir puis repartir le glaçage; mélanger le beurre et le sucre glace, le lait et le colorant (rouge et jaune pour obtenir une espèce d’orange clair).

Même en divisant les mesures par deux j’avais encore beaucoup de pâte du coup j’ai fait un petit gâteau et un gros cupcake; parfait pour mettre la bougie.
